Sprouted Oats

Sprouted oats are a nutritious option. The brand I use from Costco is free of the herbicide glyphosate. Sprouting the carbohydrate source increases the vitamins, minerals, and complete proteins while improving digestion. Grown from seeds, sprouts are alkaline and contain activated hormones that can easily bring energy to the body. For instance, proteins are pre-digested and provide the body with amino acids ready for use. Sprouts varieties include bean, alfalfa, broccoli, sesame, among many more.

I used sprouted oats for a savory breakfast bowl. Mixed into the oats was garlic and onion powder, salt and pepper. The base was topped with soft boiled eggs and avocado, then sprinkled with red pepper flakes and Everything but the Bagel seasoning (a combination including sesame seeds, poppy seeds, and sea salt). The seasoning adds crunch and texture, but also nutritional value: sesame seeds are slightly alkaline and high in calcium while sea salt is alkalizing.

The eggs can be cooked in a variety of ways. I chose soft boiled for the oats to absorb the runny yolk. Eggs provide essential amino acid bioavailability, meaning the nutrients enter circulation to be used by the body. They are high in protein and B vitamins, which provide multiple functions including:

  1. Catabolic and anabolic reactions for activating molecules and synthesizing fatty acids or cholesterol.

  2. Speeding up the conversion of homocysteine (an amino acid which in excess can damage artery lining and cause blood clots) into methionine (antioxidant and essential amino acid that creates proteins).

  3. Assisting the oxidative enzyme system which increases the rate of ATP production, the body's source of energy.

However, eggs contain acidic hormones which can cause acid buildup in the body. Even those from grain-fed animals can contain mycotoxins. Eggs are a great whole food for certain nutrients but should be reduced if aiming to achieve an alkaline pH in the body.

Avocado is 15% protein and 80% healthy fat, contains chlorophyll (the green color and nutrients that deliver oxygen within the body, decreases the binding of carcinogens to DNA, and breaks calcium stones for neutralizing acid), micronutrients, antioxidants, and alkaline minerals such as magnesium and copper. They also help identify when you're full.

Savory oatmeal bowls are a great way to be creative in the morning and to start your day with a highly nutrient dense meal.
