Zucchini Ricotta Rollups
I found this zucchini recipe on TikTok. It looks delicious: cheesy, saucy, and perfect for a satisfying side dish on a summer night. I can't wait to make these, hopefully sometime soon. I am growing squash in my garden so maybe I can use them instead of zucchini and have a farm to table meal. Thoughts on that swap?

Follow the steps below to replicate the image:
cut 4 zucchini's into 4 even pieces (long/flat horizontal cuts)
coat with a drizzle with olive oil and pinch of salt
lay zucchini flat on dish and bake at 400 degrees for 15 minutes (until soft)
mix 1/2 cup ricotta, 1 small egg, 1/4 cup parmigiana, a pinch of salt, and 2 basil leaves in a bowl
coat the bottom of a square baking dish with marinara (or any preferred sauce)
add a teaspoon of ricotta on your zucchini's and roll them up
put sauce and mozzarella on top of your rollups
bake again at 400 degrees for 20 minutes (until light brown on top)
