Wrapping Up The Morning With Lunch
After starting my day with a healthy breakfast, I like to remain that way with lunch. I often eat leftovers for lunch and add something new to the plate. This balanced, and colorful, display includes a fruit salad, a low-carb spinach wrap with leftover salad (recipe posted in my Repeatable Recipes category), and tomato salad and street corn from dinner the night before.
Eating a balanced plate is energy boosting, satisfying with all the different flavors, and fun to prepare. I always feel better after eating a healthy meal, and this is one I would definitely make again.
